I was watching a tv program last night and they meantioned this File monitoring software - monitor and log file events
I also believe that kingston are bring something out.

That's an interesting link there Ricki, but I do wonder how much this would cost. To answer Karldenton's initial question, no I don't believe there is. You could enable 2008/2008 R2's Auditing (File and Folder access) for select files and folders. If it's for any success/failure attempt (on all files), the amount of information collected would be huge.
Auditing only works with NTFS volumes and typically flash drives are formatted in FAT. I suppose if files are being copied from NTFS > FAT, this would still be logged as a success.

We only have 2003 server and I don't fancy auditing all them files.
A member of staff has an interview and we would like to monitor if they copy and worksheets saved on our shared drive onto their own memory stick.
