You need to put another disk in the server, then you can go into disk management and convert both disks to dynamic. You then need to reboot and then you can go back into disk management and add your mirror.

Start>Run...
compmgmt.msc<return>
click Disk Management
Right click the disk you want to mirror in the bottom pane and click Convert to Dynamic Disk... and follow the instructions. You will have to reboot.
Install the new drive
Then boot up and go back into Disk Management. It should autodetect the new drive and ask if you want to convert it to a dynamic disk. If it doesn't then just go through the steps above again for the new disk.
Reboot once more, into Disk Management, right click the original drive and click Add Mirror...and follow the instructions (choosing the new drive to be the mirror).
All done.
This is all assuming that your server doesn't already have a RAID controller built in. If it does you would just add another drive to the raid controller and then use the controller's configuration software/BIOS to set up a mirrored array.
Admin Tools>Computer Management > Disk management
If the server is going to be under any sort of load fit a RAID card if it hasn't already got one (or embedded RAID). We find that software RAID works but there is a performance hit.

But If you don't know what a dynamic disk is are you sure that you have the skils and knowledge to make the disks into Raids ?
Are these servers active ?
hardware raid would be better but if the server is already in use then as people above have said is the way to do it.

Also have a look at Episode 41 on the IT Idiots site as this covers the setting up of drives, disks and volumes.
