Is there not a test button on it that will print a configuration page to the attached printer?

Re: HP Jetdirect 300X Help
if you have the MAC address for the Jetbox. can you not set and exception in DHCP and then restart the box, and it should pick up the IP address from the DHCP.
This is if the above suggestions fail

Use ARP to set the IP address then ping the device to check its online. You should find your MAC address for the Jetdirect on its label.
arp -s <IP address> <MAC hardware address>
ping <IP address>
Sorry forgot to say you may have to reset for this to work. Connect the power lead while holding down the test button.

HP have some software that you can download that will find all of the jet direct boxes on the network and also all other HP networked printers. We use to moitorour HP kit.
Not fully looked in to it, but we use the automatic firmware upgrades, which has solved a number of annoying problems. It also updates the priners firmware.
From what I can remember from home, as long as it is not password protected you should be able to connect straight to the unit and reset all of the settings.

as the previous post suggested, there is a manager from HP called HP Webadmin it is browser based and it does a scan of all the networked printers thus Print servers, so you will be able to locate your print server and start workinf from there, be aware the print server may be working but might not be compatible with your printer , I had that situation with Jetidrect 175x, I wanted to connect a laserjet 1018 to it, but It was not supported.
