Been searching high and low for the policy which will enable me to stop users from Changing the 'view' file types from the folder options in Explorer.
[ Explorer --> Tools --> Folder Options --> View ]
If It does not exist I'll have to try and write one myself - I bet there is and I am not looking in the right place....

We remove the folder options button using Group Policy.
User Config > Administrative Templates > Windows Explorer > 'Removes the Folder Options menu item from the Tools menu'
Set that to enabled and your problems are gone
