I know theres adobe professional to edit PDF's but was just wondering if there is any open source software out there that can do this, like PDF creator?
any clues and recommendations would be nice

Ghostscript can decompile PDFs. It's command line though.
Also watch out, some PDFs are 'protected' against editing.
