I know some of our servers had reset overnight due to an automatic Windows update, could your servers have done the same (don't know why that would have caused the recorded IP address of a printer to be changed), or is there some issue with whatever updates were installed last night?

This is a known issue with HP printservers just dropping their static IP and reverting to a DHCP provided one.
The easiest fix to avoid this is to reserve the IP address you're using for the printer and make sure you've setup your DHCP so that if the printer does go looking for a new IP from DHCP it gets the one it should have in the first place.
