I've moved all my students to mandatory profiles with great success and they use outlook web access no problems at all.
Now I want to do it for teachers but they use the full Outlook 2007 client.
Is there a way to get the full version of outlook to work with mandatory profiles?
Also is there any problems with sims running on a mandatory profile?

All of Outlooks settings are Registry keys...
You can possibly do it with the ADM's for Group Policy...
or you in 2003 and I assume a similar function exists for 2007, you can create PRF's which have all the settings in and can be configured to execute at logon within the logon script etc...
not looked at doing this yet, but will be at some point.

I use Outlook 2003 with mandatory profiles with no problems, i presume you can use PRF files with outlook 2007. and sims also works fine.
