IE7 and SP3 here too (though I don't think that the LEA has "officially" approved either yet).

I use both XP SP3 and IE7. As a recommendation, creating a slipstreamed SP3 disc does give better results. IE7 has been around for quite a while now, so I see no reason not to install it unless you have an application(s) that simply won't work.
XP SP3 is essentially XP SP2's post hotfixes and over 1000 bugs fixed. It's extremely beneficial and is well worth installing.
You may find these update packs useful too (once you've installed XP SP3).
I am 100% up to date, I used the IE7 to turn off tabs (I hate them so no one gets them) and no one noticed.
You can ADM it to look like IE6 so why wait.

We use IE7, the staff and students use the search facility allot.
Staff use the tabs as well but we have disabled them for students.
We have also enabled the menu bar and forced it at the very top so it looks more like IE6
Had it installed site wide here but after a while went back to IE6. Problem being a strange case of IE7 closing when opening certain pages containing Flash. I was unable to determine what the fault was and does not seem to affect all establishments. But if it works 100% for you go for it.
