I usually just kill it in AD users and computers but that has always been after I demoted them fro DCs

Hard to say, it should fix the error that you were having with RUS. Those master roles technically should not interfere with exchange but if it was set up as a global catalogue server it could be stiring up trouble. Also as it was DC and, by the looks of it not properly demoted it could be causing trouble by getting in the way of certain operations that needed a DC.
I would certainly clean it up properly though because the way it is it will cause all sorts of difficult and unexpected issues in the future.

Right have siezed the roles and restarted the server. Tried again to create a new recipient update service but still has old server details - see pic. Also get an error about the RPC Server is unavailable.

Did you manage to demote that old domain controller or delete it out of AD (post 17)? as Exchange should pull the name of the domain controler out of AD. It could also be pulling it from the old ldap DNS records.

The only other thing that I can think of at the moment is running the dcdiag utility on the exchange server to see if that picks anything up.
Did all of the exchange services come up without errors when you restarted it?

Well after going through the steps from the link in post 17 and delvin into AD via ADSI Edit to remove the DC from AD new users (and exisiting users that had no email settings) now have working email address and settings.
