I am just wondering something. If you have more than one exchange server, in an organisation say 10. Would each server need its own public IP address or do you just use one and point it to the front end one?

You only need to have 1 - you set up routing in Exchange so that it all gets delivered properly (incoming is really easy - it basically just happens. Outgoing is a bit more difficult but only marginally so!)

Yeap, the names of the tecniques involved with exchange are routing groups, front end back end server configuration, clustering and load balanceing depending on how far you want to scale. Google should provide plenty of information on these.
Also depending on the site a lot will have two or more MX records (mail server records in DNS) with different priorities so that if one is down or two overloaded the mail will be diverted to the next server on the list. This coupled with rotary group reverse NAT on the gateway device provides many places to implement load balanceing and add redundancy.

Oh and I forgot SMTP connectors these are used for outbound on exchange.
