You can copy profiles (if you don't have mandatory profiles) & home folders/My Documents from the server they're located on, as simple as copy and paste if you want to do it that way.
Active Directory doesn't hold the work, the fileserver does :)
We've just been doing the same thing and archiving off work which is no longer needed day to day to save us some space. We copied all the data to external disk but we didnt just copy / paste as any errors or anything it stops so we used unstoppable copy which will deal with any errors for you etc.
Nothing worse than leaving it copying 100gb overnight and coming in next morning to a popup of 'yes to all' next morning and its only done half! :) Just a suggestion.
+2 ... unbelievably powerful tool. I'm currently doing the same by making sure all our student OUs are tidied up and placed in the relevant folders (we had an old system which just used to split A to M and M to Z profiles into two folders that needs to be removed once all the users still in school are moved - was horrible to manage!).
+3, and don't forget you can add the /l (lower case L) switch to SIMULATE what you've asked it to do so avoid embarrassing or destructive screw-ups :)
