Windows 2003 RM CC3 Server Hang

We have a windows 2003 RM CC3 network with a weird problem. Every so often (and we cant identify a pattern) our main Forest Root server just hangs, bringing with it a whole network freeze. Sometimes the server comes back to life other times, we have to turn it off and on (you cant even shut it down). There are no entries being made to the even logs in any folders - everything looks fine! The symptoms point to a server hardware problem but I'm not convinced.
I want to monitor the server to see if I can find out what its doing when it goes wrong. What tools do you guys use to do this? Network Monitor just churns our loads of low level stuff that dosnt make a lot of sense to me. I was hoping that there might be something similar to the debug facility within Exchange where you can have the system write lots of info to the event logs? Not sure what values to select in Performance Monitor!
