So, my advice would be to give them as much rope as you feel is appropriate to hang themselves with. Every aprentice is different, some will want to delve into things and you would want to restrict their access to the 'important' stuff. Others want clear boundaries and work better slowly being given more responsibility.
Responsibility is a key term, try and find the things they can be responsible for (printer carts stocks, 1st line helpdesk ticket assignment, etc) and this will go along way to introducing them to the school the work and the IT world, as well as giving them a sense of worth and purpose. These guys are us 10/15/20/40 years ago, so don't treat them as an inconvenience or as someone to do the 'monkey work'... well, not all the time anyway. Give these guys and girls an experience that sends them on their way to being good IT Techies.
Because you will be responsible in some way for helping with their qualifications, you should have a good idea of what they are doing, what they are capable of etc. In this same way, would will be able to keep tabs on their work and access and their attempts to hack your servers... only joking!

Then once he is settled give him as much as he wants, make it clear you will treat him like an adult and if he wants more then he needs to ask, because that is an important thing he needs to learn too.
What's quals is he taking do you know yet?
