Singles can be done in the Management Console. Go to Recipient Configuration / Right click the required mail box / properties / mailbox settings / storage quotas / untick 'use mailbox database defaults / set new limits.

Ah damn. I already increased the whole lot now. Can go back and change it I suppose.
Thanks for this. Will be better to apply it on an individual basis.
