Our DHCP Server lost it's DNS scope settings the other day and I think other settings too.
Is there a default set of scope settings that should be in there?

You can put them in server settings and they apply to all scopes. It might be worth looking at this also - The "Lease duration for DHCP clients" option is set to 0 and some DHCP scope options disappear on a Windows Server 2003-based DHCP server
We had a problem where someone has reserved the network address and whenever the DHCP server service was restarted, or the server was rebooted the scope is was reserved on would loose it's default gateway setting as would the clients it was leasing to.
