Enterprise, if only to try out Bitlocker to Go (which is awesome)

depends on what you want it for!
Enterprise is only for Volume License peeps
Enterprise = VL version of Ultimate
(ie both are identical except that Ultimate uses retail/OEM keys and enterprise uses Volume License (MAK/KMS) only)

IIRC from our session on 'Windows in Education' during the summer ... Enterprise / Ultimate is only available on an edu-pricing if included with Software Assurance (ie a small annual top-up) or one of the Annual Agreements (eg Schools Agreement).
If you want BitLocker it will cost a little each year. Personally I would recommend Enterprise for staff (to get BitLocker) and professional for other machines.

I would recommend you use Enterprise/Ultimate mainly for the reason of Bitlocker, not only that with this version you get the added extra's if you should want to implement them such as "Direct Access" and "AppLocker".
where as for windows xp, vista most schools deployed the professional/business version because that was the OS that was appropriate at the time, for windows7 for the added fuctionallity and the main one being Bitlocker for excryption i think this would be your option.
