I do consider Enterprise to be the only sensible choice in a school or business enviromnent though due to its avalibility of bitlocker and also its automated activation with a KMS rather than the command line nastyness that you need to perform to make business hit a KMS.

3) KMS is advertised through internal DNS and no you don't need to be a member of the domain, just running enterprise or pointing slmgr to the right address with a different version. MS has documts stating that you should secure your KMS (ie from the net) so that others can't activate off it.
