We have it as an option in our Google Chrome GPO:

Setting that setting so it is the default browser has never worked for us. When users click on web links in documents, or desktop shortcuts for example, it will always open in IE, despite Chrome being the default. It's almost as if it needs setting somewhere else in the operating system GPO's.

There's also a policy to stop IE asking to be the default if it's not (default behaviour).

Probably the easiest solution is to create shortcuts that point to Chrome, for example:

    Code:
    "C:\Program Files\Internet Explorer\iexplore.exe" https://login.microsoftonline.com/
Change the Program Files path and exe to that of Chrome's. Job done

Yes, I neglected to mention that we had also stopped IE asking whether it was the default browser.

The real problem were links in Word files and PDFs - they always opened in IE no matter that the GPO had set Chrome as default.

You could try a registry key? We have Chrome installed but force IE as the default using a few keys that are deployed via GPP

Registry set IE as default - Pastebin.com
