My school wants me to create them a website and I want to have it hosted within the school. I know that you register the domains with nominet however they ask for your hosting providers isp tags. Since we're hosting it what would these be.

You should just be able to just them the external IP of your webserver. They can then point the domain to that.
We used to host out own website too until someone decided it was a good idea to outsource it.

As far as I know, you still need a DNS server (or service provided by someone who has an IPS tag) to say that the A record for that domain points to the school's IP address.

The tag merely defines who administers Nominet's records on your behalf. It's nothing to do with nameservers, DNS, external IPs or anything else.
Have it detagged and deal with Nominet directly, though you'll pay through the nose for renewals if you do...
Out of interest why are you self hosting?
With web hosts being as cheap as chips theres not really a huge advantage to it... (VLE's are a different matter)
