WAMP is an easier setup I will agree however I had a bad experience with it once so I tend to go for XAMPP now.

I've never liked all the extras that came with XAMPP. I used to use it myself until I discovered WAMP, basically it's the same product(s) at the end of the day so difficult to destinguish between the two.

I decided to move over to Apache using Apache2Triad its works flawlessly and it is so easy to install.
As for IIS i have only one thing to say, the day Microsoft makes something that doesn't suck, will be the day they start to make vacume cleaners.
