Demonstrating WSS3 niftyness

Can any one suggest any nifty things I can use to demonstrate Sharepoint frees greate features.
Set it up with the thought of moving our internal intranet over, created a site & some sub sites but I'm having a bit of a block of what to do with it to show it's full potential. It's all looking very meh, not much more than we do at the moment with our current set up.
Or to put it another way, what cool things do you do with yours?

differing levels of access depending on staff/pupils/manglement etc, allowing forums, notice boards.

document workspaces for collaberative spreadsheets, letters etc.

Student council subsites

integrated maintenance, helpdesk logging.
