What does UNATTEND.XML do?
Simple question. Hoping the answer will be Simple as well!
What does it do? How do you edit it? How does it relate to WDS \ MDT?

in simple terms, its the unattended file that can be used to automate an install of Vista / 7.
Edit it in notepad if you want, or you can use WAIK to edit it.
You can use it in a OS Deployment Task Sequence in MDT
I've used a default-ish one in SCCM, as i've generally got the SCCM TS to do the fancy bits
