Being a newb to all things linux I would like your reccomendations for a simple server setup to store ghost images and at a later date maybe host intranet pages.
It needs to run on an old ProLiant P3 server and not require a PHD to install :p

The standard answer seems to be ubuntu server (http://www.ubuntu.com/). Although pretty much any distro will do what you want.
Might be worth looking at freeNAS: http://www.freenas.org/ which is a very cut down version of BSD but very easy to setup for hosting samba shares.

It depends on your Linux experience... I am a Debian-man so here's my recommendation:
1. Debian Etch - stable, secure, just works!
2. Ubuntu Server - very good community support, easy to configure for the newbie (we have instructions on the wiki too!)
3. Openfiler - a distro specifically for what you want (basically a build your own NAS/SAN)
Like I said, the RedHat fiends will come out of the woodwork and try to tell you that RPMs are better than DEBs.

And based on Debian as well so you should be able to use most of the same packages and instructions (with a few differences).

Anyone tried fog? Free Opensource Ghost ...
So far I've found creating images a bit of a pain (you have to PXE boot to Linux to take the image), but brilliant for building; it'll change hostnames and change hosts to AD for you.
(sorry, bit of a non-sequitur, but it followed on from "storing ghost images")
