difference is the window manager
Ubuntu = gnome
xubuntu = XFCE
kubuntu = Kde
server = none
just not sure what to do with it now.
could anybody point me in some sort of direction.
first thing, enable some repositories for more software options, check the starter guide http://ubuntuguide.org/wiki/Ubuntu_Edgy
...have a look through the synaptic package manager
install some servers etc or just use as a desktop.
'sudo apt-get install firefox' on cli or use synaptic

Re: kubuntu? what do i do know?
There are package differences between Kubuntu and Ubuntu, I think Amarok, Kopete and the rest of the KDE suite are the big differences.
Synaptic is not installed by default but the package manager is "adept" on kubuntu. Its under systems, however I replaced it with Synaptic because its a lot better.
