Setup FTP Users & Set Permissions
They next stage of my Ubuntu quest is setup FTP users and set permissions. Does anyone have some nice easy dummies guides to do this please?

Typically when you add a new user it comes with interactive login permissions (SSH/SFTP etc) but as you just want FTP I'd consider using the advice in here in selecting your shell but otherwise it should just be "sudo adduser" if I recall correctly.
It's also worth noting if you're giving them webspace etc you can save yourself some grief by enabling the mod_userdir module in Apache so they can use http://hostname/~username to access files etc. (This will require the creation of a predefined directory in each home directory by default public_html).

HOWTO : Create a FTP server with user access (proftpd) - Ubuntu Forums is also a useful quick guide.
Have you found the manual system (man) yet? man proftpd.conf for example will (probably) give you the details of what each configuration option does in there. If in doubt, try opening a manual; it will tell you if it doesn't exist.

Which release of Ubuntu are you using?
