Which Server(s) you run virtually will, to a certain extent be dictated by the specification of the physical hardware and choice of hypervisor deployed.
I have worked with Academies that have fully populated c7000 blade enclosures deployed and run their entire server farm virtually and other schools who have chosen a more phased approach.
Thats true, only so much I can investigate at the moment.

Id like to get a basic general structure idea in my head before going in and be able to modify given the physical hardware/demands of the school.

Having read up on it some more ill definately be setting up a new domain on a 2008/2003 Server to run alongside the RM network which seems to have been successful for many doing similar things to my plans.

I would echo that, the RM set up places too much reliance on key services which have to run on the forest root.

Dont even think about running a hybrid network or even two networks. Ditch the lot and jump in, it will be much less pain in the long run.
