Printer monitoring software
Sorry if this has been asked loads of times before 
We have RM Printer credits enabled on our network, and keep a record of those, but what I would ideally like is some software that takes a screenshot, for instance, of whatever students are printing, so we can see exactly what's being printed off and by who.
Any suggestions? I'm guessing there are others who are using something that does this?

I seem to remember this exact question coming up quite recently, can't remember if it was here or it might have been over on the TES forums.
My solution would be to install Ghostscript on your print server, create a redirected printer to replace each printer share on your server, and have that redirected printer keep a copy of the PDF document generated when stuff is printed to it. Bear in mind that this will quickly generate a lot of files to be stored somewhere, so you'll probably only be able to keep a couple of days worth of print outs.
