So, what settings/apps do I need to get/sort out? I've turned off a lot of the data settings, so I [hopefully] won't get hit with a massive bill.
Also, I'm on pay-as-you-go. Not contract.

Turn airplane mode on whilst out and about unless you are expecting calls or texts. Turn off all auto updates in Google play store. That way apps will only update when you check or its connected to wifi

Whilst airplane mode will reduce your data consumption it's a bit of a daft suggestion for normal use of a phone really.
Can you get a data add on with your provider?

I have a Galaxy S3 and I am with the 3 network I am not on contract but I pay £15 a month on a 30 day rolling contract, I get unlimited data, and believe me I have tethered my laptop and streamed Iplayer, footy matches and downloaded loads and I have had no problems.
I get 300 mins talk and 600 txts but I don't use either of these to the point that I worry it was for the data. I don't know what there coverage is like in your area but I think this deal is fantastic, plus I don't have to worry about using too much data

That sounds cool, but I have WiFi at home. ATM I'm checking settings to only go online using WiFi.
I've turned off data roaming, and set the mobile network to MMS only.
Plus, I've turned off auto sync and background data. And set Samsung apps to WiFi only. [I'm not 100% on what that does...]

Install custom firmware like cyanaogenMod. Gets rid off all unnecessary bloat and unwanted programs phoning home.

This is the place to go for everything Jelly Bean.
There are regular updates to the OS, and the dev is more than happy to chat about it. There are loads of people to talk you through the install.
Currently, I have a "test" build on my S, but you would never know. It works perfectly! No lag, 240dpi, and improved throughout.

Another benefit to installing a Jelly Bean ROM, is that updates for apps downloaded through the Play Store are significantly smaller.

I've upgraded to cyangenomod 9.1.0, which was a lot easier than I thought it would be.
Although, I did manage to get my phone stuck in a boot loop…
It's nice. But took some getting used to.
Le edit: Jesus christ... 125mb of data used already today. If this wasn't on wifi I'd now have a £200 bill. This is not cool.
