Yes, it is a solution called "teachers' Desktop" and is only really relevant for some things.
I would check on the SIMS site to see if it does exactly what she wants, but you do have access to all students details (which means that the office manager needs to be aware of DPA and I would advise that you get them to sign a piece of paper saying that they are aware of DPA to cover your back if anything happens to the laptop)
The synchronsing is a bit clunky (which is why we are leaving it and going for the TS over HTTPS option)
