that best thing i've seen on an ipad (it's not an application but it might amuse you) is velco.
I come across it on stumble.. some guy attached two strips of strong velco to the back of the ipad, and then the other side on a wall, dashboard of a car, back of a car headrest, motorbike fuel tank and a ceiling. This way you can use the ipad conveniently as a digital picture frame, GPS / Satnav, in car entertainment or stare at it when your lying in bed.
I thought it was genius.
Unfortunately I didn't make a note of the link so I can't find it again

It's not an application, it's on the internet, but there's a presentation application called Prezi.. it looks like it would be AMAZING on a touch screen.

Also Apple's Keynote remote app. Excellent Application. If you use Keynote for your presentations it allows you to remotely control the keynote pres on your iPhone (and I would imagine iPad) using the wireless network. But saying that you have the ability to VGA out from the iPad and have keynote app for it so it would make more sense doing that way. So probably forget all that i said
Angry Birds. Good, fun game.

We've got 1 iPad in, to pass around the departments and find out who'd get the best use out of it. Therefore we're on the hunt for a cross section of apps (free or paid for) for all departments.
pUniverseHD which is an astronomy app, quite shiny to play with.
Shakespeare which is literally all of shakespeares works in an app. Free
3d Brain which shows the parts of the brain in 3d! designed for the iphone/touch, blown up to ipad size it's a little pixelated, but does the job.
We've also been looking at these
3D4Medical.com : The World's largest, high quality collection of 3D medical images
Pocket Universe: Virtual Sky Astronomy for iPhone, iPod touch, and iPad on the iTunes App Store
Math Ref for iPhone, iPod touch, and iPad on the iTunes App Store
What we have been struggling with is demonstration.
We got the ipad - vga lead (a snip at £25!), however when you connect it to a monitor, it only outputs some apps, itunes photos/videos. We want it to duplicate the screen, but i'm going to start a thread about that if i can find one.

Ooh yea, also, the website tvcatchup on the ipod/phone/pad is really cool. Watch freeview on 3g or wifi.

Note that he used Industrial Strength velcro - beware of imitations. I could only find the stuff on eBay from US suppliers, so I had to wait a bit but now I have 20 feet of the stuff in both black and white.
