In order to do updates on our Macs we have to log into the LEAs ISA server and then do the updates. To try to improve things I have set up Software Updates on the MacOS X server. The workstations appear to be looking at the server OK but I can't get the server to download the updates properly. Can anyone point me at some decent documentation or tell me how I can get the server to use a username and password for accessing the updates like WSUS3 does on Windows?

Try installing squidman on your os x server

which will allow storage of proxy authentication on your os x server, then add the ip or url of your LEA ISA server as a 'parent' proxy in the squidman preferences. After you've done that Setup SUS and the server to use squidman as the local proxy and that way you won't be required to provide credentials when downloading updates, nor will you need to change proxy settings on your os x clients.
Do be aware when you start the update server for the first time it won't say its started until its finished downloading all the updates some hours later.
If only macs could update themselves!
