This was the 70s - if you wanted realistic footage of someone running accross a bunch of alligators, you got a bunch of alligators and got someone to run accross them. Roger Moore's "making of" book of Live And Let Die is worth a read at some point - in the same film they have a high-speed boat chase around the river system (filmed by getting a bunch of boats, strapping camera crews to the front, and chasing around the river system with them) and blow a large ship up (filmed by getting a large ship, packing it full of explosives, and blowing it up). The best part is that Kanaga's alligator farm really is an alligator farm, owned by Mr Kanaga - the "Warning: Trespassers Will Be Eaten" sign you see in the film isn't a prop...
