I like the idea of Backblaze and Jungle Disk, and at $5 a month Backblaze is looking favourite, but I'll research first.
I also like the idea of a file server using Windows Home Server stored at my father-in-laws. This of course would be more expensive, having to purchase the hardware/software.

Word of caution about using disk images as backups - if you are ever in the position of having to restore onto different hardware, you can end up with a machine that doesn't boot.
I understand what you're saying but I know that with Acronis (and I'm sure others are the same) you can pick and choose which files from the image you want to load. If different hardware is used you can build that system and then just load your music/videos/documents etc from the Acronis image.
