Does anyone know of a way to do this on XP boxes? PStools can stop services et cetera but I need to know the process ID i think and it can only list the services running not the processes?

PSList shows processes on a remote machine. PSKill will kill processes on a remote machine either by process ID or name.
I haven't used them on an XP machine, we're 2K here...

Yup, PSTools will do everything that you need. If find the following PSLIST command particularly useful;
pslist \\remotepcname -s -t
This will give you a very basic but dynamically updated process list for the remote PC.
