AutoDL might do what you want. Dunno if it works with ex2k3 (I imagine it would). never used it, so no idea how it does its stuff.
alternatively, you could look at scripting an event sink so that any email to listsubscribe@domain.com automatically adds that person 1. - as a contact in your AD and 2. - to the distribution group for list@domain.com. Never done that either, so no idea how easy it would be (infact, the one time i tried to write an event sink it killed the server, so I've avoided them ever since)
er Distribution Groups wll allow dynamic lists based on LDAP queries. There's no need for that.

Query based distribution groups don't offer automatic subscription / unsubscription - they need the user (or an admin) to manually alter the LDAP query or add the relevant attribute to the user's account. Fine for small groups of users who already exist on the exchange server, but if you're getting on to a decent sized list or want to include external recipients you need some way of automating the change.
