Setting up two different email domains with same domain?!?!

Ok, I am making big changes to my network over the summer so I will be recreating all my users and this year I am going to fill in the email address field.
Now then what to put in there?
I have domain registered prentonhighschool.co.uk which has an mx record pointing our staff email to our live@edu mail server but our students are about to use zimbra full time and I would like to go for a sub domain of prentonhighschool.co.uk like student.prentonhighschool.co.uk and then point that mx record at my zimbra server but I don't know if this is possible.
Can anyone let me know is this is do able?

I'm thinking that I have to do it through my domain name provider then. I'm with 1and1. I'll have to take a peek. Thanks kmount!

You should have a cPanel for your domain, if not get one installed by your ISP there about £30-£50 and well worth it, from there you will be able to update your MX and lots of other settings.
