Just be very carefull using iTalc, although I agree its a great programme it is however open source and if a student can get access to the source code they will get up to all sorts of fun.
We had a student who managed to extract the keys from a desktop, then he downloaded the sourcecode and wrote his own application which after a bit of guess work on his part for ip addresses and machine names was able to remote into classrooms all over the school.
Since this we have been forced to remove iTALC from all pc`s and block it from being run on the network.
We currently use ABTutor, it can log all activity if you set a policy todo so, and also allows you to easy see the screens. We currently have each room with a different password which is easy todo we deployed it all out threw GPO, and that way each teacher machine can control the room and only that room, when we can see any machines that we want as we have them in groups on are machine with the passwords saved.
