I'm looking for appliance type machines to install things like a webserver or firewall or nac on.
Just a small featureless box with several network ports.
I suppose some of the mini-itx book style stuff qualifies for what I'm looking for.

I just make a frankenbox our of our junk pile for projects like these. However lately, I've been relying on VMWare server instead.
Depends how small you want - I like the Lex book PCs, though they can be slightly hard to source.
http://www.mini-itx.com/ used to carry them I think.
My personal favourite site for mini pc's is http://www.lin-itx.com.
Lots of good products on there.

I recently bought a fanless dual gigabit LAN Jetway board from them, very impressed :)

That's the one I was talking about - used 5 or 6 of these and they are really reliable
You could also try some of the mini pc's from these guys:

But...actually not frowned upon in geekdom as RMS (Richard Stallman) has "punning" as a hobby. (or something to that effect......)
