Not familiar with the camera so may not be suitable but the Webcam Timershot utility in the Microsoft Powertoys springs to mind.
Quite a few ways to do it with Linux, but not looked at it for a couple of years. Not much help I know, but gives you an avenue to look down

Had quite a discussion on it, so I don't know if that will help at all? :)
Tilaphos (other software exists), £20 webcam, old (xp) laptop.
Ended up with 50,000 photos and counting. Using a linux box + jhead + mencoder to make sense of them (rename to date-time, convert to avi).
You can use a Raspberry Pi - this chap: time lapse | Raspberry Pi built his own rig to move the camera along a track over a length of time, but I'm sure his explanaion will cover making a basic non-moving system, too.
