    I shall be making Welsh Cakes later... it's a family tradition I can't give up

    They sell them in Waitrose now... ridiculous price for something that's so easy to make!

    Was going to make them last night, got all the ingredients... except the spice. carried on making flowers, ladybirds and butterflies for tomorrows cupcakes.

    Every recipe is different. Mine doesn't include spice. My Mum reckons there are as many recipes for Welsh cakes as there are recipes for "spag bol".

    I've been busy

    My recipe (as handed down through the Davies/Edwards ancestry):

    8oz (200g) Self Raising Flour
    4oz (100g) Butter/margarine (Not diet marg... flora is fine, but not flora light)
    3oz (150g) Sugar
    4oz (200g) Mixed dried fruit
    1 Medium Egg
    Griddle or heavy bottomed frying pan - standard frying pan won't cook evenly. My griddle is genuine ½" power station boiler plate!

    Rub fat into flour. Stir in fruit and sugar. Bind mix with egg to form soft dough (add a little milk if necessary)
    Roll out to ¼" (just over ½cm) thick and cut into large circles.

    Pre-heat a griddle and wipe with a little flavourless oil (sunflower is fine) or butter/marg
    Cook Welsh cake for roughly 1 minute each side until lightly browned

    Used to be a restaraunt in Crwys Road, Cardiff called 'Y'r Ystafell Cymraeg', specialised in Welsh Cuisine. Of course, because I lived there and wasn't a tourist, I never tried it.

    Laverbread......fried in bacon fat......on toast......to die for.

    My Mum was making them with spice for 40 years, wouldn't be the same without.

    You could sell them to Tesco... they didn't have any in today... not sure the assistance knew who St David was either.

    She doesn't make them any more, not down here anyway.
