Depends on the cut of the steak, a fillet generally blue rare/rare through to medium for a rib-eye as they take a bit more cooking due to fat content.

I like mine medium rare, but so many places overcook steak that I frequently ask for rare in the UK. The only establishments that understand blue is different to raw are either in France or can cook steak how I like it anyway.

Medium well here, but echoing what others have said few places seem to get a steak order correct: that order can get you anything from rare to charcoal.

A good friend of my dads likes his steak pretty much blue. As he says, knock it's horns off, wipe it's a**e and stick it on a plate.

Me personally I like medium rare, but often order rare because they are always overcooked. Best steak I've ever had was in a little pub in the new forest, they cooked it perfectly and it was a really nice steak with a lot of flavour. One guy in the place was complaining about it because it had a strong flavour and he insisted the meat was off - poor bloke had obviously never had a decent steak before. I felt sorry for the chef trying to explain that's how it's supposed to taste, and your average supermarket or wholesale brought meat just doesn't taste the same.

That's a little too rare for me. At least walk the cow past a radiator before putting it on the plate.

Blue for me, always, if I can get it.

Chefs I know tell me that they keep the best steak for those who ask for blue, those who like well done get the stuff the dog won't eat!
