At our school we have 60 support staff to 30 teachers... Most of the support staff are members of a union (most of em Unison I believe) and my guess would be that if the staff at the college (where derer1 is) turned around and organised, the college would recognise them fine, as the LEA recognises them and you are actually employed by the LEA are you not? (I am...)

Wow! That is one helluva Support Staff-teacher ratio.
I'm a member of Unison myself. Not for any other reason aside from it seems to be the only non-teacher union represented here.

That said, do they have the necessary knowledge to deal with the quagmire that is UK schools?

There is a distinct lack of a union aimed at school support staff - even though there are so many of us. We are only really able to join the general unions such as Unison.
As for the ratio of support/teaching staff, I would expect this sort of ratio in other schools too... There is the admin team, the cleaning team, the technicians, admin team, kitchen team, sen team (including TA's), and maintenance. That is a lot of support staff.

I am employed by my school, but they outsource payroll to the local county council payroll department. The same goes for my school before this as well.
Is there a general union for IT Professionals? I still regard myself as an IT Professional despite being a lowly Non-Teacher.

I suppose that if you call all 'non-teaching full time staff' support, then we are at about 4/1 in our favour. But then we are a boarding school with 11 houses, each with kitchen and other domestics. We also have dozens of peripatetic music teachers on some sort of tax dodge arrangement...
