The way that we do it is
In AD add yourself to the mailbox security with full mail box access
Add the student to the Staff GAL
Open Outlook and create a new profile
Remove the offending email
Undo all the above changes
I’m not sure if this is the correct way or the best way but it works and is only done with written permission from SLT

The sender can recall a message and also request it to be deleted if unread but that only applies to recipients in the same exchange organisation and does not work in all scenarios!
Exchange does not permit even the Administrator to open other users Inboxes out of the box.
This needs to be configured carefully so as not to infringe privacy laws and policies.
We all know that the admin can do anything he wants but no one is beyond the legal framework.
Once you have granted yourself the ability to log in at will and read your heads emails without his/her permission you are just seconds away from a P45 if you misuse anything you might have read, be careful as I know people that have fallen on their sword over this.
