I'll post a picture of my Exploration Cruiser later. This is the current build that is working OK for me but could use some better armour as I have no Plasma resist and it's literally killing me:
Mixed Phaser/Plasma Beam Arrays
Photon Torpedos fore/aft
Emergency Power to Weapons
Emergency Power to Shields
Emergency Power to Aux Power
Aux Power to Structural Integrity Field (combines well with above plus Engineering Team for a big hull heal)
Vent Warp Plasma
Shield Drain Beam
I heard that rotating Emergency Power to Weapons and Shields is the way to go, along with one of each type of Team. Then I use structural and engineering team as needed to restore lost hull points (easy with a crew complement of 1000).

Is it fairly easy to get into the game? I.E. getting resources, a ship etc. - I find with previous f2p games that although it's free, it's virtually nigh on impossible to get anywhere without having to 'unlock XYZ' or 'PAY NOW AND GET ACCESS TO THIS' jargon.

Not the case with STO which is why I love it so much. Paying does not mean you can "unlock" things quicker. Your guaranteed a ship every 10 levels with between 1-3 free choices of craft. Some ships can even be rewards from quests (I've recently just got a USS Enterprise-C type ambassador class starship from a quest!), some others are rare loot drops. There are of course a selection of other ships that you can pay for with maybe an additional perk or two but not buying a better ship does not leave you with an unfair disadvantage.

You can also buy ZEN via Steam which is the premium currency. This can then be turned into Dilithium which is acquired in-game or vice versa. That means it is possible to acquire the cash store items through in-game effort by converting Dilithium to ZEN.

When it was P2P? (sure it was), i did the easy thing. Money > Zen > Level up boosts > Money > Zen > Ship > Money > Zen > Upgrades > Enemy QQ. lol

I got to the end of the Klingon War and kinda stopped playing, I only had 1 friend on it and he stopped playing, I might have to start it up again on my MacBook Pro :-)
will need to find out where I put my mouse though, as playing it with a trackpad was just plain awful.
