There are some Linux distributions geared for multimedia/music:

For serious notation-based music, our college uses Sibelius (expensive option though).
How about FruityLoops? Can be complicated, but fun.

Wikipedia have a good list:

In particular, Rosegarden is worth a look:

Interactive whiteboard wise: BoingBoing had a link to a Flash-based drum machine the other day:

That might be the sort of thing you're looking for. I'm sure a bit of Googling around the terms "flash" or "java" along with "music" or "drum machine", "synthesiser", "keyboard" or whatever will come up with some similar alternatives, depending on what exactly you need.
I know I saw a Greenfoot (runs as Java applet) keyboard that ran inside a browser window, bet you could play that on the IWB and fix that up to Jonny Lee's Wiimote gloves interface, play it from across the other side of the room... Thinking about it, isn't there a music game about to come out on the Wii? Use the Wiimote to play a variety of (air) instruments? Air guitar! Air drums! Air glockenspiel!
