If you need to do something today - as in literally right now - then go for Live@edu; otherwise wait a short while and you'll be able to go straight onto Office 365 for education directly. There's lots of planning you can do as well as any infrastructure prep in order to be ready.
Will Live@Edu customer eventually be migrated to Office365?

Hi James can you please elaborate more on this please; what is the current level of recovery in live@edu. The main reason I still maintain Exchange for staff is a) granular recovery of an individual mail and b) the fact I can archive a monthly backup onto tape for archival/legal purposes.

Our students thrive with live@edu and skydrive but our school being run as an enterprise like it is i still don't feel live@edu is ready for our staff

(perhaps ive answered my own question and the fact we operate as a business fundamentally ensures we require enterprise software)

The Exchange Online service description is where you can find out all the info you need!
